The pioneers at Distillerie du St. Laurent are shaking up the tradition of Canadian whisky—often perceived abroad as bland and boring—with an eccentric approach that blends styles.
The mash is fermented on grain, allowing the aromas of Quebec cereals to express themselves freely. After two distillations in Scottish-style copper stills, the result is a rich spirit with complex nuances and an oily body. The distillate is then aged for three years in new charred oak barrels, similar to typical American whisky. A revisited Appalachian classic, this Quebec whisky is made from corn from the Montérégie region and rye and malted barley from the Bas-Saint-Laurent region.
